This recipe is such an easy one, but yet full of flavour and freshness. I love the contrast between the fennel and the sweetness of the dried dates. It's a proper summer salad that both fills you up and is light enough to allow you to enjoy you afternoon. Enjoy

Simply wash and dry your gem lettuce leaves and arrange on the plate. Add sliced fennel, chopped dates and the almonds. Finish with the fresh dill and dressing.
