This is a delicious crunchy salad.
1. Finely cut or grate the apple, onion, zucchini and cabbage or coarsely chop in a food processor and place in a bowl. Cut the red chili finely and add to the bowl.
2. Mix the yogurt, lemon zest and mustard with a little lemon juice and a good pinch of pepper. Mix in the grated vegetables, a dash of extra virgin olive oil and most of the parsley into a delicious creamy mixture.
3. Chop the peanuts and grind them into small pieces in a mortar. Sprinkle the peanuts over the salad for a tasty bite just before serving and finish with a sprinkle of the remaining parsley.
