  • 50 grams lettuce
  • 1/2 clove of garlic
  • 2 carrots, peeled
  • water
  • 6 broccoli florets
  • Salt and pepper to taste

You most likely have never heard of the health benefits of hemp seeds (available at many natural or health food shops)!

With one tablespoon of hemp seeds containing about twice as much protein as an egg, this easy and unusual recipe is a great way to pack more protein into a creative salad or as a thick creamy soup.

Preparation

Cut the broccoli florets, season with a little tamari sauce and marinate for 20 minutes.

Cut carrots into strips with a vegetable peeler, sprinkle with a little sea salt and set aside.

Combine lettuce, hemp seed and garlic in a blender or food processor until well blended. Add some water, if necessary, to obtain a creamy consistency and thickness to your liking. Season to taste with a pinch of salt and pepper.

To serve as a creative salad keep the mixture thick. Spoon the mixture onto the serving plates, top with the marinated broccoli and carrots strips and serve garnished with edible flowers, if desired, for a special touch.

Hemp seeds contain the eight essential amino acids that are not directly synthesized by the body and therefore must be obtained through food. They also contain vitamin B and E in large quantities in the seeds, and the oil contains a high proportion of polyunsaturated fatty acids omega 3 and omega 6. They deserve special attention in this context due to an additional component: hemp oil belongs to the small category of oil whose seeds contain gamma linoleic acid (GLA 2-4%), which means that it may be beneficial in cases of circulatory system diseases and chronic inflammation.
