Ingredients

  • 320 gram black rice
  • 1 mango
  • 2 orange sweet pointed peppers (Sweet Palermo)
  • 160 gram soybeans
  • 2 avocados
  • 175 gram sliced red cabbage
  • 40 gram spicy vegetable sprouts
  • 2 tbsp of wasabi furifake

Dressing ingredients

  • 8 tbsp soy sauce
  • 4 tbsp sesame oil
  • 4 tbsp water
  • 4 tbsp honey
  • 2 tbsp of thinly sliced rings of spring onions

If anything is popular these days, it is a pokebowl. With eye-catching colours, fresh products and tasty vegetables, it knows how to capture everyone's heart. This black rice pokebowl with sweet pointed peppers, manga and avocado is a perfect sunday dish.

Preparation

  •  Cook the black rice by following the instructions on the package and then let it cool a little.
  • Peel and cut the mango into small cubes. Wash the pointed peppers first and then cut them into thin rings.
  • Cook the soybeans for about 5 minutes.
  • Cut the avocado in half lengthwise and remove the pit. Hold the avocado and cut the flesh into strips. Do not cut through the skin. Carefully scoop out the flesh with a spoon.
  • Mix all the ingredients for the dressing together.

Place the rice in the centre of the plate/bowl. Place the mango, Sweet Palermo rings, soya beans, avocado, red cabbage and vegetable sprouts around it and finish with some wasabi furifake. Repeat with the other 3 plates. And serve with the soy dressing.
