This simple salad is my favourite, it accompanies our main meal every night in my house - the kids love it! The red wine dressing adds a real zest to it.

Place sliced Spanish onion, tomatoes, sundried tomatoes, olives, feta cheese, lettuce and capsicum into a bowl. Add dressing, mix well and serve. Dressing: place red wine vinegar, olive oil, salt and pepper into a jar. Shake and serve.
