Place both mixed and lamb lettuce onto a platter. Pour it with a balsamic sauce. Cut the hard-boiled egg into eight, even pieces and put it on the lettuce. Cut the tomatoes into halves and add to the rest prepared before. Cut Cheddar into narrow stripes or grate in on a grater and crumble it all over the lettuce. Add pan-roasted sunflower and pepper at the very end.
