This nutty and fruity carrot salad goes well with good wholemeal bread (eg home-baked spelt bread with dried apricots and cashew nuts). For a tasty and substantial meal serve this salad with bread and butter.
Peel carrots and cut into sticks.
Peel the oranges and take out the white parts.
Roast the cashew nuts and pine nuts lightly in a pan without oil.
Prepare dressing by micing olive oil with sherry vinegar.
Add some cumin and, if desired, sugar or honey to the dressing.
Season to taste.
