  • For the croutons: cut the toasts into cubes. Heat the butter in a frying pan and roast the bread until it’s evenly golden brown. Place the croutons on a plate and store at room temperature.
  • Mince the garlic. Mix the salad cream and the whipping cream in a small bowl. Add garlic, Parmesan, vinegar, salt and pepper and mix until combined.
  • Rinse the lettuce and let it dry well, then pluck into bite-sized pieces.
  • Put the lettuce into a salad bowl and mix carefully with the dressing. Shave thin pieces of Parmesan and the croutons over the top.
