Ingredients

  • 600g chicken breast fillets
  • 1/2 bunch of parsley
  • 1 lemon
  • 3 tablespoons olive oil
  • 500g cabbage
  • 2 carrots
  • 1 cucumber
  • 1 small shallot

Dressing ingredients

  • 3 tablespoons white wine vinegar
  • 5 tablespoons grapeseed oil
  • 1 pinch of sugar
  • Salt and pepper

This is an easy and delicious main meal salad to prepare and enjoy!

Preparation

  1. Wash the lemon, dry, then finely grate the skin to make the lemon zest
  2. Make a lemon marinade by combining the lemon juice, pepper, olive oil and lemon zest
  3. Wash and dry the chicken breasts, brush with the lemon marinade, cut into pieces and thread on the skewers. (Cover and refrigerate for 30 minutes to 1 hour)
  4. Rinse and drain the cabbage, carrot and cucumber and slice them all into thin strips and finely chop the shallot and parsley
  5. For the vinaigrette, put the vinegar with 2 tablespoons of water, a little salt, pepper and sugar and gently bring to the boil in a pan
  6. Add the grape seed oil and the hot vinaigrette to the cabbage, carrot, cucumber, parsley and shallot and toss through
  7. Let the salad stand for 30 minutes to allow the flavours to combine
  8. Cook the chicken: BBQ, grill or pan-fry chicken skewers until cooked through
  9. Serve salad seasoned with salt and freshly ground pepper and topped with the chicken. Garnish with fresh parsley
