  • 1 green salanova butter head lettuce (or similar)
  • 1 pomegranate (with seeds separated)
  • 1 handful of freshly chopped chives

A very colourful, fresh and easy salad. Hello everyone I am Alberto from Spain. I love this salad and I can eat big amounts of it. I'm not really a big fan of sophisticated salads because my family always prepared simple, yet tasty fresh salads nearly everyday. This one is a favourite of mine that combines the sweet crisp butter lettuce with the tangy pomegranate and aromatic chives. I am sure you will enjoy it too.

Preparation

There is not too much to it! Cut, wash and spin or pat dry the lettuce leaves and place them on your serving plate - like a big flat platter to share. Scatter the pomegranate seeds and chopped chives over the top. Whisk the olive oil and vinegar and dress the salad. Add some salt if you want.

Tips from the author

For this salad I choose to use the green salanova butter lettuce because you get lots of small whole leaves. If you cant find them you can use a larger green butter lettuce and tear the leaves into smaller pieces.

If you want to be a bit fancy, you could add some crumbled feta or substitute the pomegranate with raspberries.

Serves 4 to share as a starter or side dish.
