This broccoli "Christmas tree" salad is a romantic appetizer for any party and especially during the festive season. You can use a bit of creativity to make this easy salad at home that everyone can share and enjoy.


1.Wash and peel potatoes, slice and cook them in a pan of boiling water (with a little salt and olive oil). Once cooked mash the potates with a little milk, olive oil or butter as you prefer. Place a mound of the mashed potato In the middle of your serving plate. This is your base.

2.Break the Broccoli into small pieces and steam for a few minutes - still crunchy, but cooked.

3. Steam cook the carrots and the corn kernels too.

4. Place the broccoli florets all around and over the base of mashed potatoes, to create a "Christmas tree". Add the corn and carrots as decorations around the "tree" and serve with a little salad dressing over the top.
