This lettuce impresses with its beautiful green-red leaves. In the supermarket, the salad is sold under the name "red lettuce hearts". This recipe convinces with its simple preparation, delicious taste and healthy ingredients: Easy, tasty and healthy!

  • Wash the lettuce hearts and rocket and cut into bite-sized pieces.
  • Drain the olives.
  • Roast the pine nuts in a fat-free pan.
  • For the dressing, finely chop the herbs and spring onion and mix with the oil and balsamic vinegar. Season with salt and pepper.
  • Mix the vegetables and the dressing.
  • Sprinkle with shaved Parmesan plus toasted pine nuts and serve.
