Cos lettuce – crispy, juicy and very tasty. Its leaves are rigid, bottle-green (abundant in vitamins) or yellow-green (delicate flavour), thick, fleshy, lengthened, usually smooth or slightly wrinkled and rounded at the top. Cos lettuce contains significant quantities of vitamins (carotene, B1, B2, PP, C), mineral nutrients (calcium, phosphorus, iron) and is easily digestible.
Wash and dry lettuce then shred into pieces and put onto a flat plate.
Wash avocado, peel off the skin, remove the stone, dice and pour lemon juice over it to prevent the avocado from going brown. Add the shredded lettuce.
To serve, pour over the dressing. Salt and pepper to taste and toss.
Sprinkle Parmesan over the salad.
