My new vegetable way

I realised that I am eating too many carbohydrates..I guess because they are quicker to find/prepare. Now I changed my plans: at least half of my plate must be vegetables! My pledge is is to share my new menu this week! If you have any suggestions, please share them with me ;)

09.04.2014 - Dinner: champignons and celery salad, roasted pumpkins and parsnip and grilled eggplants with tofu bocconcini.

 

10.04.2014 - Lunch: fennel salad with goji berries, carrot, olives and pistachio salad and pumpkin risotto

   

10.04.2014 - Dinner: fennel, tomatoes and chickpeas salad and rolled eggplants with cheese (I forgot to take a picture of it)

19.04.2014 Lunch: boiled potatoes with coriander dressing, grilled zucchini, carrots and tomino (cheese from the north of Italy) and bruschetta with eggplants purée
