Introduction

For something a little different, try this recipe - yum!

Ingredients

1 avocado
2 tablespoons Japanese mayonnaise
3 tablespoons black sesame seeds
3 tablespoons white sesame seeds
3 x 100g rectangular fresh tuna steaks
3 teaspoons peanut oil
100g Wasabi salad leaves
100g daikon, julienned
2 teaspoons sushi soy sauce
2 tablespoons orange juice
2 tablespoons lemon juice
2 teaspoons mirin

Preparation

Puree avocado and mayonnaise in a food processor until smooth. Refrigerate until required.

Combine sesame seeds on a large plate. Coat tuna in oil and roll in sesame seeds. Heat a non-stick pan over high heat and sear tuna for exactly 40 seconds on each side until just coloured. Wrap tightly in cling film and refrigerate until required.

For dressing, combine soy, juices, mirin and sugar until sugar dissolves. Toss daikon with the wasabi salad leaves and half the dressing.

Reserve the remaining dressing. To serve, smear avocado mayonnaise on the base of a large serving plate. Slice tuna into 1cm thick slices and arrange over the avocado, each slice overlapping the other slightly, drizzle with reserved dressing. Place wasabi salad to one side of the tuna.

Enjoy a little of each component of the dish in one mouthful.
