Roast Pumpkin and Chickpea Salad

Introduction

We have this salad all the time on family occasions. It's healthy, fast, simple and delicious. (Suzana)

Ingredients

Check peas (2 tins)
1 Butternut pumpkin
2 carrots
2 red capsicums
2 green capsicums
250 g Baby spinach
2 red onions
Parsely

Dressing Ingredients

Olive oil
Vinegar
Salt
Pepper
Oregano

Preparation

  • Peel pumpkin
  • Cut into small cubes and place in oven until soft
  • Make dressing
  • Drain and rinse chick peas
  • Slice all ingredients (except carrots)
  • Peel and grate carrots
  • Place cooked pumpkin in bowl and add dressing, salt and pepper
  • Mix all ingredients
