Introduction

Everyone can make a pasta sauce, but this recipe made with fresh tomatoes will give your pasta a special touch.

Ingredients

2 kilos ripe tomatoes
1 large onion
3 cloves of garlic
Provencal herbs
Olive oil
Salt and pepper

Preparation

  • Heat the oven to 150° C.
  • Cut the peeled tomatoes into 8 parts (remove the tough centre), and put them in a casserole.
  • Peel the garlic and cut it into slices.
  • Shred the union.
  • Add the garlic and the union to the tomatoes and sprinkle with pepper, salt and Provencal herbs.
  • Mix everything thoroughly and leave it in the oven to simmer for about an hour and a half.
  • Check regularly to see if the process is not going too fast. If so, turn down the heat of the oven.
  • Stir thoroughly again and add some more pepper and salt if necessary.

Additional Information

Tip:

If you do not like a coarse sauce, put it in a bowl and use the hand blender. This way it is also not strictly necessary to peel the tomatoes.

I use this recipe also as a base for my tomato soup.
