This salad is special due to the combination of chicken and melon and the use of a hollowed melon as a salad bowl.
The melon flesh is scraped out of the melon and mixed with other ingredients like chicken filet, crunched almonds and corn salad.
Making this salad is fun and not difficult and takes about half an hour to prepare.
The marinade:
To create the marinade, mix 4 tablespoons of Sambal Oelek, two teespoons of sambal oelek and two tablespoons of Sugar. Cut the chicken filet in small pieces and mix it with the marinade.
The melon:
Slice the melon in half en remove the seeds from the melon. Now comes the interesting part. Use a teaspoon to cut small balls out of the melon. Watch out not to cut open the skin of the melon from the inside. Turn around both halves of the melon so the fluids can leak out.
The almonds:
Meanwhile, roast the crunched almonds in a cooking pan until they have a light brown colour. Wash the pepper and cut it in small pieces. T
The dressing:
To create the dressing for the salad, mix the mayonnaise with the curry powder. Flavor it with pepper, salt and some lemon juice.
The chicken filet:
Bake the marinated chicken filets with the olive oil for approximately 5 minutes. A sticky layer should appear on the chicken filet.
Putting it all together:
In a bowl, mix the corn salad and the lemon juice. Add the melon balls, chicken and pepper. Mix all ingredients well and put this mix in the hollowed melon parts. Add the dressing and as a finishing touch, sprinkle the roasted crunched almonds over it.
