Greek Salad

Introduction

I love this salad because I love the taste of feta cheese in a salad, and it is a very easy salad to make. (Bruce)

Ingredients

1 head of iceberg lettuce
1 head of cos lettuce
1/2 Kg of plum tomatoes
180 g of black olives (sliced)
120 g of sliced radishes
120 g of feta cheese
60 g of anchovies (optional)

Dressing Ingredients

Olive oil
Lemon juice
1 tsp of dried oregano
1 tsp of black pepper
1 tsp of salt
4 cloves of garlic (minced)

Preparation

  • Wash and cut lettuces
  • Dry, cool, and cut lettuce into bite-sized pieces
  • Combine lettuce, tomatoes (quartered), olives, and radishes in a large bowl.
  • Mix dressing ingredients together and then toss with vegetables,
  • Crumble feta cheese all over and arrange anchovy fillets on top (if desired)

Additional Information

After washing lettuces, make sure to remove all moisture and cool them in refrigerator so they are dry and crisp for serving. You can break up the leaves by hand if you wish.
