Exotic butter leaf salad with melon and crab

  • 1 butterhead lettuce salad mix
  • 1/2 galia melon (or other melon like honey dew or canteloupe)
  • 200g crab sticks

Dressing ingredients

  • 1 tbsp tomato puree
  • 3 tbsp yogurt
  • 3 tbsp mayonnaise
  • 1 tbsp lime juice
  • 1 lime thinly sliced
  • 1 tbsp mango chutney


Slice the melon in half, hollow it out with a spoon and create small balls of the fruit flesh of the melon. Use a piece of the shell from the melon as a small plate. Wash and tear the lettuce and place the leaves on the shell. Top and spread the crab sticks on the lettuce. For the dressing, mix all ingredients to a fine medium thick dressing and drizzle on top of the salad. The dressing is key, so taste in between to get the right flavor. Optional to serve with slices of seasoned baguette. (or a nice bread roll) Enjoy!
