An exceptional salad creation to indulge in. Quick and easy to prepare.
Cut the leek into thin rings, wash, steam or boil. Allow to cool down.
Cut cocktail tomatoes into wedges and add to the leek then crumble or dice the feta over the leek and tomatoes.
Dressing:
Mix mustard, balsamic vinegar, olive oil, sugar, salt and pepper into a dressing and drizzle over the salad. Toss and blend well.
Arrange onto serving plates (or one big sharing plate) and garnish with the fresh parsley
