Introduction

Being a great lover of Greek food, I am also a great lover of this salad. It gives a nice little glimpse of a taste of the Mediterranean. (Dan)

Ingredients

5 Tomatoes
2 Lebanese cucumbers
1 Red capsicum
1 Green capsicum
1 Red onion
1/4 cup seeded Kalamata olives
200 g Feta Cheese
2 teaspoons oregano leaves
Pita bread

Dressing Ingredients

1/4 cup olive oil
2 tablespoons apple cider vinegar

Preparation

  • Cut tomatoes into wedges
  • Half cucumbers lengthways and slice thinly
  • Cut capsicums into 2 cm pieces
  • Slice onion thinly
  • Cut feta cheese into 2 cm pieces
  • Cut pita bread and use it as the base for the salad
  • Place all ingredients on top of pita bred base
  • Add dressing

Additional Information

To further enhance the Mediterranean flavour, you can replace the oregano with crushed dried rigani. The authentic way of presenting this salad is to leave the feta in a whole piece and sit it on top of the salad.
