Crisp Green Salad

Introduction

This is an easy, simple but delicious salad! My family loves it and it's great as a 'lazy TV dinner night' salad or a 'friends over' salad. You can whip it up in minutes. I created this salad for my brother because all he eats is lettuce and mayonnaise. When we get home from school mum asks what we want for afternoon tea and Sandon says "lettuce and mayonnaise!"
So try it... you'll love it!

Ingredients

baby cos, leaves torn
200g baby spinach leaves
150g rocket
1 lebanese cucumber, julienne
3 celery sticks, cut into 1cm bits
handful of toasted walnuts
1 granny smith apple, cored and oxidised and cut into 2cm circles
a bit of red onion, sliced on a mandolin for the finishing
a bunch flat parsley leaves, for the finishing
the parsley stalk and roots, cubed finely, for the finishing
1/4 cup grated parmesan cheese, for the finishing

Dressing Ingredients

2 Tablespoons ranch dressing
2 Tablespoons thick egg mayonnaise
1 Tablespoons lemon juice
salt and lemon pepper to taste

Preparation

*Wash all salad
*Get out serving plate and place cos on the bottom. Try to be creative, fiddle around with it until you like the stile of it
*Then place the baby spinach on top of the cos
*Next, throw some rocket on
*Now dry roast the walnuts for 1 min
*Now THROW (GENTLY) the cucumber, celery and walnuts on the plate. Scatter some around the plate too
*Carefully stand up the apple slices vertically, and some lying down on top of the bed of lettuce
*Scatter the onion, parsley leaves, stalks and roots on top
TO MAKE THE MAYONNAISE...
*In a small bowl mix the ranch and mayo together until well combined, then slowly, while still mixing, add in the lemon juice. Add salt and pepper to taste
*Dot the dressing on the plate and over the salad. Grate parmesan over the top to finish
