The way my colleagues joke can combine many different ingredients in a creative way, really makes me jealous. Recently she invited me for dinner and made this healthy and delicious salad, based on tarly (par boiled wheat), cucumber and mushrooms. As soon as I tasted this, I immediately thought it deserves a bigger audience. So… here it is. Enjoy!
1) Cook the tarly according to the instructions on the packet. Take about 2 minutes of cooking time off. Drain.
2) Cook the garam masala over low heat in the oils. Add the sliced mushrooms with a little water. Let simmer under the lid.
3) Once the mushrooms are wilted, add the diced red pepper. If this is softened add the tarly (without cover) and fry for 3 minutes.
4) Add the diced cucumber and feta, chopped onions, prunes and walnuts together. Stir and push to one side of the scale. put it on the other side tarly mixture.
Grind a little garlic pepper over it. Bon appetit!
