Classic Home made Tomato Sauce

Introduction

There is nothing better that using your own fresh tomato sauce at home. Good for using all those ripe tomatoes when they are plentiful and when you cant eat them all in your salads.

Ingredients

½ to 1 kg ripe tomatoes
1 onion (sliced, chopped)
3 cloves garlic (finely sliced)
Sea salt
Freshly ground black pepper

Preparation

In a heavy based saucepan throw chopped tomatoes, onion and garlic with the oil + seasoning. Gently mix and tumble (by hand is great!),
Cook with lid on for 20 mins to ½ hour. Season to taste and then simmer (lid off) for up to an hour.

Additional Information

This is the basic recipe…..but every batch will be different and you can try different things like reducing more for a thicker sauce, adding a little water or red wine for a thinner sauce. Some like no seeds (so core and seed before cooking) and if you prefer a puree, then push cooled sauce through a sieve. Can also experiment with herbs & spices ie. Chilli or oregano or basil etc, etc.
