This nutty and fruity carrot salad goes well with good wholemeal bread (eg home-baked spelt bread with dried apricots and cashew nuts). For a tasty and substantial meal serve this salad with bread and butter.
Peel carrots and cut into sticks. Fillet oranges. Brown cashew and pine nuts lightly in a pan without oil.
Mix olive oil and sherry vinegar. Add some cumin and, if desired, sugar to the dressing. Season to taste.
