Broccoli Salad with Raisins and Garden Peas

Introduction

I love to make this salad and take it to work, it keeps really well in a container, the sunflower seeds add such a nice texture to it.

Ingredients

600 grams Broccoli florets
125 grams Raisins
125 grams Sunflower seeds
250 grams of bacon
250 grams red onion, sliced into rings
250 grams garden peas
6 Tablespoons of mayonnaise
1 Tablespoons of yoghurt
2 Tablespoons of white wine vinegar
1 Tablespoon of sugar
Salt and Pepper to taste.

Preparation

Brown bacon and remove excess liquid.

Place a large pot of salted water on heat to boil. Add broccoli and blanch them for 3-4 minutes. Drain and rinse with cold water.

Combine the broccoli, red onion, garden peas, bacon (diced), raisins and sunflower seeds in a large serving bowl.

Dressing: Whisk together mayonnaise, yoghurt, sugar and white wine.

Add the dressing to the salad, toss and serve.
