Baby Spinach with grilled Zucchini and Sundried Tomatoes

Introduction

A very nice tasty salad combination to enjoy. 

Preparation time: 25 minutes

Ingredients

1 packet of 100g Baby Spinach
2 good sized zucchini
50 grams of semi sundried tomatoes
Salt and pepper (ground)

Dressing Ingredients

1/3 cup oil (preferably olive)
1/4 cup balsamic vinegar

Preparation

  • Slice zucchinis into ½ cm thick strips. Place the zucchinis strips into a sealable, plastic bag.
  • Add the oil, vinegar and salt and pepper. Seal bag and refrigerate for 2-3 hours.
  • Set grill to medium heat. Take the zucchini out of the bag, set the marinade aside (this will be added to the baby spinach latter in the next step).
  • Wash n Toss the baby spinach.
  • Add to this the semi sundried tomatoes and the marinade.
  • Place the zucchini strips across the grill, cook on each side for 2 minutes.

Before Serving:

Whilst the zucchini is cooking plate up the baby spinach mixture. This can be individual serves or served a one dish. Lay cooked zucchini strips across the top.
