Mercato has become an institution in Daylesford with a mix of locals and visitors that make it to the tables of this popular country restaurant each week.

But this week a team of enthusiastic salad lovers got together with chef Richard Mee who was on hand to provide expert tips, to create and share their own salads. It was the perfect lunch.
