Broccoli is one of my favourite vegetables; not a week goes by without incorporating it into my menu at least once or twice. It is just starting to come into season too, as broccoli develops a wonderful sweetness with the winter chill.
It is a beautiful plant source of many nutrients and is also very tasty. However, it is rarely eaten raw. Raw?! Yes, raw in salads, retaining the full range of health benefits, yet with a completely different flavour than we are accustomed to.
This is a surprising and amazing salad so I highly recommend you don’t miss it.

Preparation

Cut the bacon into strips and fry until golden brown. Remove from pan, drain the fat, and set aside.
Wash the broccoli well and cut off the stalk, then cut florets to a small sizes.
Prepare homemade mayonnaise (made with sunflower oil, egg and salt) and add a dash of milk (or cream) to give a light liquid consistency.
Place the broccoli florets in the bowl, then top with the warm bacon strips and a few cashews. Leave the mayonnaise on the side and serve it to your liking.
